BODEGAS EL MAESTRO SIERRA

PEDRO XIMÉNEZ

The Pedro Ximénez from Bodegas El Maestro Sierra is a naturally sweet wine, aged in
American oak casks.

Winemaking with the Pedro Ximénez grape, which gives this wine its name, begins
with the “asoleo”: drying the grapes in the sun to turn them into raisins, concentrating their sugar
content and changing their physical, chemical and sensory nature.

Once the must has been pressed, wine alcohol is added to stop fermentation, bringing it up
to around 10% to stabilise it. Over the following
autumn and winter the wine gradually clears.

Next comes the “deslío”, or removal of sediment. The wine is fortified again,
this time to 15%, and then moves into the casks, where it begins five years of oxidative
ageing in the criaderas and solera system.
