BODEGAS EL MAESTRO SIERRA
PALO CORTADO
Palo Cortado is an almost legendary fortified wine.
Its name comes from one of the most characteristic tasks in a bodega: marking the
casks in chalk to record how each wine is developing.
That “palo cortado” (“cut stick”) refers to the crossed mark the cellar master made on a cask when, at the moment of tasting, he found organoleptic qualities different from the usual ones, a
sturdier body that hinted at a different evolution of the wine.
The Palo Cortado from Bodegas El Maestro Sierra is therefore a fortified wine of mixed ageing
and maturation. It starts life as a Fino, aged from the outset under the veil of
flor, and ends with the oxidative ageing of an Oloroso.
The result is a bright, clear mahogany wine with copper glints, offering the
delicate, elegant aromas of a long-aged Amontillado together with the
roundness of an Oloroso.
