BODEGAS EL MAESTRO SIERRA
AMONTILLADO 12 YEARS
A singular wine, born of the fusion of two types of ageing, always within the
traditional solera and criaderas system: biological ageing under the veil of flor, and oxidative ageing. This
twofold ageing process makes Amontillados extraordinarily
complex and fascinating wines.
The first stage of ageing takes place under the veil of flor. During its early years
the wine rests in the criaderas, where it acquires pungent notes and its dry palate
becomes more pronounced. After that time, it is fortified to 17% alcohol, which weakens the flor
and begins the second stage of ageing: oxidative ageing, which will last
more than a decade.
During this time it loses its pale colour and gradually darkens,
becoming more concentrated and taking on the nuances typical of oxidative ageing.
