AMONTILLADO DE ANTICUARIO 1830

Amontillado Viejo 1830 is a unique wine, born of the fusion of two types of ageing: biological and oxidative.

Thanks to this twofold ageing process, Amontillados become
extraordinarily complex and fascinating wines.

First, the wine is aged under the veil of flor. During its early years
it rests in the criaderas, where it acquires pungent notes and its dry palate
becomes more pronounced.

After that time, it is fortified to 17% alcohol, which weakens the flor
and begins the second stage of ageing: oxidative ageing, which will last
more than thirty years.

As a result, it gradually darkens, becomes more concentrated and deepens the intensity of its
sensory, aromatic, taste and visual nuances.

This Amontillado is kept in the original casks built and signed by the
master cooper who founded the bodega, José Antonio Sierra, in the early 19th century.
These casks are still fully in use and are a fine example of craftsmanship. With a
capacity of 2,000 litres, considerably larger than the usual 500, they give this
wine a singular, distinctive oxidation by creating a particular balance of liquid,
oxygen and wood surface.
