BODEGAS EL MAESTRO SIERRA
FINO
Fino is aged beneath the layer of yeasts known as the Velo de Flor (veil of flor). This natural veil gradually grows until it covers the entire surface of the wine, preventing direct contact with the air, and therefore oxidation, throughout its ageing. This gives the wine very special organoleptic characteristics, including its colour. The flor is made up of yeasts of a singular character which, over centuries and through a process of natural selection, survive thanks to the oxygen and compounds contained in the wine.
Biological ageing lasts for at least four years in 500-litre American oak casks, using the unique traditional criaderas and solera system, until the wine is bottled.
